Over the past weeks we have been featuring Heights Farm Market vendors - allowing you, our customers insight into who they are, what they do and identifying why they are such an asset to our local Heights Farm Market.

This week, we are showcasing JAVA & Co. Small Batch Recipes!

Owners: Brian and Jamie Knoll

Local Items: Coffee infused syrups, hand cut biscotti, artisan caramels, pancake mix, oatmeal, JAVA Spice, snack bars, saucey caramel, handcrafted gift crates and espresso powder!

Vendor Information: JAVA & Co. is brought to you by a husband and wife team with an extensive background in the hospitality, food and restaurant business. Leaving New York City and Las Vegas for a change of pace, brought them to Illinois. After a few years of 'quiet living', the hospitality and food business began calling to them. In 2008, JAVA & Co. was born.

JAVA & Co. creates chef-inspired coffee infused specialties. Handmade utilizing proprietary small batch recipes with fine ingredients like real vanilla and hand cracked eggs in the hand cut biscotti; locally roasted coffee beans in the syrups; freshly ground whole spices and coffee in the sweet and savory JAVA Spice; and dairy cream and butter in their artisan caramels.

In their short time in business, they have received national recognition and have been featured by Country Living Magazine, Time Out New York, Daily Candy and many more!

These specialty local businesses add such a wonderful mix of products to the Heights Farm Market - we are glad to have them as a vendor!

Jenkins Country Comforts & Farm Market

This week we are showcasing Jenkins Country Comforts & Farm Market!

Owners: Dave and Pat Jenkins

Local Items: Sweet corn, heirloom tomatoes, strawberries, red raspberries, blackberries, vegetables, greens, artisan breads, cookies and pies!

Vendor Information: Welcome to Jenkins family farm! My husband Dave and I - with help from our oldest son Matthew, farm 1000 acres of mostly corn and soybeans. My husband is a third generation farmer. We live on - what at one time - was his grandparents farm. About ten years ago I decided we needed to add more to our farm - to have contact with the local people in the community who consumed our products, so I decided to start an on-property farm market.

We had an old barn that was built in 1921 (with timber from the farm it sits on) that was not really being used. Fast forward ten years. We now farm 1000 acres of corn and soybeans, nine acres of sweet corn, two acres of pumpkins and another three acres of raspberries, blueberries, strawberries, blackberries, heirloom tomatoes, cucumbers, onions, green beans and other assorted vegetables. We sell at three farmers markets in the Peoria, Illinois area. We also have an on-farm market and bakery which is open seasonally.

"Most farmers are not as lucky as I have been. The farm markets allow us to talk directly to people about our food and how its grown. American farmers want our food to be the safest in the world, because what YOU eat is also what WE eat."

Stop by the Heights Farm Market on Wednesdays from 3:30 pm to 6:30 pm - now through mid-September - to meet Pat and pick-up some of her wonderful produce, sweet corn if it's still available (the best in Illinois) and fresh baked pies!

DMG's Beehaven Farm

This week we are showcasing DMG's Beehaven Farm!

Owners: Dan and Miseon Grillot

Local Items: Honey, Tomatoes, Sweet Peppers, Hot Peppers, Garlic, Eggplant, Okra, Summer Squash, Vegetables, Fruit and Fresh Cut Flowers.

Vendor Information: Dan and Miseon started their farm 16 years ago when Dan retired from the United States Air Force. They pride themselves on being good stewards of the land - growing a wide variety of flowers, vegetables, fruit and nuts without the use of chemicals.

Dan is also a beekeeper. New for 2011, he has a small quantity of high quality honey available at the market. (Note: I purchased their honey and it is buttery, smooth delicious goodness in a jar!)

Vendor Information: Linda Prescott started beekeeping in 2005 and works with husband Pat on a 34 acre farm raising sustainable vegetables, herbs, fruit and flowers. They are in the process of restoring three barns that were originally built in the 1930's.

Fresh honey is a special find at farm markets. So, stop by the Heights Farm Market to meet Leslie and Linda. They are looking forward to meeting you!

White Chimney Farm

This week we are showcasing White Chimney Farm!

Local Items: General Produce

Vendor Story: White Chimney Farm - located in Washburn, Illinois - provides all naturally grown (from certified organic seed) produce of the old Heirloom varieties. In Larry's efforts to accomplish this, he uses the SPIN method of farming. SPIN stands for Small Plot Intensive Relay. By using this method, there is a freshly harvested supply of produce for each market week - also keeping an active crop rotation for best soil health.

"I am proud of these all natural growing methods," states Larry, "while not yet certified as organic as mentioned above, my seeds are certified organic."

Ground care is managed only by rototilling and hand hoeing. No weed inhibitors or pesticides in any form are ever used. Fertilization - only all natural and organic composting materials are used. Natural soil amendments - kelp meal and a fish based liquid round things out. As for water? Whenever possible, captured rain water is used. When not available, ground water from a cistern or well water is used.


This is Larry's fifth year of market gardening. The first four years were part-time, but as of July 1st, 2011, he is a full-time gardener. And Larry - from all of us at the Heights Farm Market - we are so glad you are! White Chimney Farm is a wonderful addition to the Heights Farm Market and the local community.
